Alleyways often lead to danger and mystery, but one alley in Downtown Honolulu will lead you to pizza.
Located in the old Mercury Bar location on the Fort Street campus of Hawaii Pacific University, Proof Public House is a local bar known for its specialty pizzas and drinks. It thrives on trust, strength and change, which holds true to the pub’s motto.
Proof opened in early 2015 and is the project of Downbeat Diner owners Joshua Hancock and Serena Hashimoto. Live music and entertainment is provided at Proof every now and then, but for the most part, it has been a chill atmosphere for people to hang out during lunch, Happy Hour and dinner, or to huddle and watch the latest sports game (three large televisions boast different ESPN channels simultaneously).
Open windows and doors welcome visitors into the small pub. An assortment of drinks lines the wall, alongside framed historic images of Downtown Honolulu. A pool table is also set up at the forefront of the restaurant for visitors to play a round or two while waiting for their food and beverages.
While Proof offers its standard variety of food and drinks, it has a collection of exclusive menu items, such as the spam pizza, fried rice pizza (both pictured above), the avocado crisp dill sandwich; and char-siu pork salad. Proof also serves vegetarian options and Mediterranean food to add to the menu’s eclectic variation.
More expansion is in the works for one-year-old Proof, which includes more entertainment and food options for visitors to enjoy.
